Paleo Power Bites
One of the hardest parts about not only being gluten-free but someone who eats mostly Paleo is finding quality snacks on the go. I’ve found it’s always helpful to be prepared with pre-cooked food and healthy snacks available so I am not in a situation where I am too hungry or make a choice that does not nourish my body.
Recently, I’ve been coming home from work and putting a big glob of almond butter on top of a date. So delicious and satisfying! It got me thinking…what if I just combined those flavors I love so much into a ball with a couple of my other favorite flavors and superfoods like vanilla extract and maca powder! And…voila! My Paleo Power Bites. Enjoy!
What’s your favorite snack on the go?!
10 medjool dates ⠀
1/2 cup of almond butter⠀
1 tbsp. of maca ⠀
1 tbsp. of chia seeds⠀
1 tbsp. of ground flax seed⠀
1 tsp. of vanilla extract ⠀
Pinch of salt ⠀
1. Combine all ingredients in a high-speed blender or food processor.
2. Remove batter and roll into small balls. Store in the fridge or enjoy right away!⠀
