Balsamic Watermelon Side Salad with Fresh Basil and Mint
I’m squeezing out the last final bit of summer with my Balsamic Watermelon Side Salad topped with fresh mint and basil-because is there anything that screams summer more than watermelon? This side salad does not involve much preparation and will be an instant crowd pleaser if you bring it to an end of the season BBQ.

Start but cutting the watermelon in half. Be sure to wash with a vegetable spray before cutting. Cut the pink melon into small cubes, about 2 inches. Place in a large mixing bowl.
I only used half of a watermelon for my recipe, which yielded a lot of watermelon, but you can easily double the side salad if you are making it for a lot of people. The dish will remain intact for a couple days as well.
I made came up with the idea while up in Maine where our herb garden flourishes…unlike my garden in Denver where I think I have killed everything I have planted this summer. When I had the idea to make this dish I could not decide if I wanted to use fresh basil or mint herbs. So I decided to use both!
Grab a few leaves of both herbs, rinse, and chop together making one mixture of herbs. I cut the herbs into small, rectangular strips. Set aside.
In a small bowl, combine vinegar and salt. Sprinkle the herbs over the watermelon. Add feta cheese as well if desired. Then, gently pour the vinegar over the watermelon, stirring carefully in order to keep the melon intact.
And THAT’S IT! Refrigerate and serve cold.

Balsamic Watermelon Side Salad
1/2 of a watermelon
1 tbsp. of chopped fresh basil
1 tbsp. of chopped fresh mint 2 tbsp. of balsamic vinegar Pinch of salt 1/4 cup of feta cheese (optional)
1. Slice a watermelon in half, then into small, square cubes (Note: If you want to use the entire watermelon, simply double the recipe) 2. Rinse basil and mint. Chop herbs and mix together 3. Place balsamic and salt in a small bowl 4. Add watermelon to a large mixing bowl. Sprinkle with fresh herbs. 5. Drizzle the watermelon with the balsamic and salt mixture. With a spoon, mix gently. 6. If desired, add feta cheese and continue to mix. Serve cold as a refreshing side salad!
